Job Description
We have an opening for a full-time Sushi Chef
The Sushi Chef is responsible for preparing sauces & sushi items for our guests in accordance with Canal Club food preparations & service guidelines. Primarily works in front of guests while preparing foods at the sushi bar & ensuring a fun & inviting experience. Monitors & ensures the portioning of foods prepared at the sushi bar & maintains the cleanliness & sanitation of the sushi bar & equipment. In accordance with Canal Club's service & cooking procedures:

Greets & welcomes guests upon arrival to the sushi bar.

Responds promptly & courteously to guest requests & provides guests with information about foods.

Ensures guests are satisfied with food quality & service while communicating with the server assigned to the sushi bar for the shift.

Performs shift opening & closing duties as assigned to include cleaning the neta cases, cutting boards, equipment & floors.

Is knowledgeable about & complies with the Canal Club's standards on food portioning, cooking methods, quality standards, kitchen recipes, safety & sanitation standards, policies & procedures.

Adheres to the Company's guidelines on proper food presentation & garnishes for all dishes. Properly handles ready to eat food that is served raw.

Handles, stores, labels, & rotates foods properly & in accordance with public health safety, state & local laws.

Uses knives, hand tools, utensils, & equipment to portion, cut, slice, julienne, whip, beat, maintain holding temperature, chill, freeze or otherwise produce food.

Keeps Head Sushi Chef informed of inventories & immediately reports any issues with defective products or equipment.

Presents a clean & neat appearance & uses a courteous manner with all guests.

Immediately notifies manager on duty when guests are not satisfied with their experience or if an accident occurs.

Assists with the preparation of sushi items.
Requirements

Must have at least 1 year of experience as a sushi chef

Candidates must be able to communicate in English, read and follow recipes.

Candidates must exhibit sanitation knowledge, advanced culinary knowledge.

Candidates must be able to display accurate knife skills.

A culinary training degree is preferred, but not required.

Requires the ability to work organized and within a team environment.

Candidates must be at least 18 years of age.

Must have or obtain a Food Handlers Card.

High School diploma or equivalent.
